Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup honey
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1 cup plain Greek yogurt
- 1/4 cup honey
- 1 tsp vanilla extract
- Fresh fruit for topping (such as berries, sliced peaches, or kiwi)
Instructions:
- Preheat your oven to 350°F (180°C) and grease an 8-inch round cake pan.
- In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the honey, applesauce, vegetable oil, egg, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- In a small bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth.
- Once the cake is cooled, spread the yogurt mixture over the top of the cake.
- Top the cake with fresh fruit of your choice.
- Serve and enjoy your delicious and healthy cream cake!
Note: You can adjust the sweetness of the cake by using more or less honey in both the cake batter and yogurt topping, depending on your preference.
